  Bowl food. It's the latest craze! But while I was creating a Pinterest board for vegan bowl food, Jackie Sobon went ahead and created an awesome cookbook.  Darn it!  :)  Actually, I LOVE this cookbook.  It is filled with more than 100 one-dish, plant-based bowls that everyone can enjoy, vegan or not.  They're hearty, nutritious and delicious, and sure to please anyone.  Just take a look at that Apple Pie Smoothie Bowl, doesn't it look fun?.

HOLA!  Buenos dias? Having just returned from Mexico on family vacation, I am completely inspired to share an incredibly easy to make, inexpensive, protein rich, Breakfast burritos.  But before I do that, I just have to say how impressed I was with our trip to Cabo. Beyond it just being so darn pretty, and not mention relaxing, everyone we met were kind & polite, even when we passed on buying their goods they were selling on the marina.  What really blew me away, is that almost every restaurant we went to for dinner, asked right off about food allergies, even the gentleman taking our reservations! Way to make a food-allergy-mom feel more comfortable!   I can't remember the last time one of my waiters here actually asked about any potential allergies.  Needless to say, it was a wonderful time away and I am thankful everyone took such good care of us.

GF blender pancakes

Some mornings call for oatmeal, others call for muffins, but weekends, absolutely, require pancakes!

Weekends were always my favorite as a child.  Waking up whenever I wanted to (which was ALWAYS early), watching Saturday morning cartoons (the ONLY time cartoons were on) and enjoying the smells coming from the kitchen as Mom was making our BIG family breakfast.  Back then, that consisted of eggs, & bacon (neither of which I eat now) and best of all, Pancakes! Oh, how I love pancakes.

Berry smoothies are one of my absolute favorite, post workout drinks.  Smoothies are also one of my son's favorite breakfast options, so I was messing with an idea of starting with a smoothie then adding to it for a naturally sweet, allergy friendly (dairy, egg & nut free), filling breakfast.  Then "tada" the Berry Smoothie Pancake was born!

This is the first post I'm sharing that is not completely Vegan (gasp!) as it contains eggs.
I know, I know,,,,,"how could you?".  Well, the answer is simple....I don't want my food allergic child to die.
To some, this may not make any sense, as its hard enough for me to wrap my head around.  For the past 9 years, we have been telling our X-man NOT to eat ANYTHING that contains eggs as it has sent him into anaphylaxis before. But after his last Dr. appointment and another round of skin testing, we decided to challenge egg since his level dropped just so slightly.

Bite-size Grits & Greens I am not a Southern girl by any means, but I do love me some southern food. Biscuits and gravy, warm cornbread, or grits and greens, Oh MY! Throw in some sweet tea and we're having a party (and making my kiddos & hubby, incredibly happy). Southern cooking really is good 'ol comfort food, and grits may just win as my favorite since they are little healthier (depending on how you make them) and easier to make vegan & allergy-friendly .
