Summer is almost here, and I canβt think of any food that screams βbackyard cookout blissβ better than a big ‘ol burger.Β It’s one of the first foods you think of when warm weather hits (like now) and it’s perfect for bringing friends and family together. That’s why we’re getting an early start on grilling season.
Whether youβre a vegan, vegetarian, or you love your meat, I’ve got an epic veggie burger that everyone will love!
Oklahoma & BBQ’s
It’s safe to say that people here in Oklahoma love their meat and are very opinionated about every aspect of it, from who has the best BBQ & burgers to the proper toppings for said patty . In fact, I just had a conversation with a friend who let me know that the correct condiment for a burger is a mustard and mayo combo, never ketchup. Then went on to tell me that “Ketchup is just wrong … And people that use it on steak should be prosecuted for crimes against humanity. French fries get dipped in ranch, honey mustard, mayo (in the UK) or nothing. Tots get mustard. Onion rings get ranch. Steaks get nothing if done right, if the cook screws up, Worcestershire or A1.”
Very opinionated….and we haven’t even started talking about veggie burgers.
Hilary’s Veggie Burgers
I know, you all are here for different reasons….some have food allergies, some of you are vegan and others are just trying to cut back on certain foods but let me tell you….no matter what category you fall in, you’ll love these burgers from Hilary’s Eat Well. They’ll convert even the staunchest skeptic.
Here’s why….

California Style
This is a veggie burger so substantial, it requires a two hand hold. This California Burger is a big, flavor packed, veggie burger loaded with lettuce, fresh tomato slices, vegan cheese, onion and large slices of fresh avocado. Add your favorite condiments but I prefer a spicy vegan aioli on this one. It’s a lean and clean, West Coast style burger and one of my absolute favorites!!
Garden Slaw Burger
If you like coleslaw, then this burger is for you. We topped off an already tasty, adzuki bean burger with our cool, crisp cabbage and jalapeΓ±o slaw and fell in love with how the richness from the avocado balances out the slight hint of acidity. Toss a little shredded carrots on top, and now our burger has the slightest bit of sweetness added to it. Trust me when I say that every bite of this veggie burger will bring an explosion of flavor and texture to your mouth!
Grilled Mushroom + Onion Burger
Because life is about options, here’s another one for you….a grilled veggie patty with melted vegan cheese, and slathered with sautΓ©ed portobello mushrooms and caramelized onions. Hard to resist, isn’t it? Then garnish the burger with some lettuce and spicy barbecue sauce and long story short, all the components of this mushroom burger are delicioso!

The Ultimate Veggie Burger
Youβll fall in love with these easy-to-prepare, plant-based, allergy-friendly Veggie Burgers.Β
Ingredients
California Burger
- 2 Hilary's burger patties
- bibb lettuce
- 1 tomato, sliced
- 2 slices of vegan cheese
- 1/2 avocado, sliced
- 1/4 raw onion, sliced
- Gluten-free or whole wheat hamburger buns
Mushroom Swiss Burger
- 2 Hilary's burger patties of choice
- 8 oz sliced mushrooms
- 1/2 onion, thinly sliced
- 2 sliced vegan provolone cheese
- bbq sauce
- Gluten-free or whole wheat hamburger buns
- drizzle of olive oil
Coleslaw Burger
- Β½ cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon finely grated yellow onion
- 2 teaspoons sugar
- Β½ teaspoon celery seeds
- Kosher salt and freshly ground black pepper
- Β½ small head red cabbage, very thinly sliced
- 1 small carrot, peeled, coarsely grated
- lettuceΒ
- 1/2 avocado, sliced
- jalapeΓ±o sliced
Instructions
California Burger
- Grill burger patties according to package.
- Prep veggies then assemble when burger is cooked. Top bottom bun with veggie patty, vegan cheese, tomato, avocado, onion and condiments of choice.
- Add top bun and enjoy!
Mushroom Swiss Burger
- Grill burger patties according to package.
- In a small sauté pan, heat to medium and add a drizzle of olive oil. Add mushroom slices and sauté until nice and brown. Set aside then add sliced onion to the same, hot pan. Add a little more olive oil if needed, but let onions cook down until a nice caramelized look appears. Add a slice of cheese on top of the onions and cover for a minute, allowing heat to melt cheese onto the onions.
- Top bottom bun with veggie patty, caramelized onion, melted cheese, sautéed mushrooms and condiments of choice, like barbecue sauce or vegan pesto.
Coleslaw Burger
- Make coleslaw (up to 1 day early). Whisk vegan mayo, vinegar, onion, sugar, and celery seeds in a large bowl; season with salt and pepper. Add cabbage and diced jalapeño then toss to coat; season with salt and pepper. Cover and chill at least 30 minutes.
- Grill burger patties according to package.
- Top bottom bun with lettuce, veggie patty, vegan cheese, coleslaw, avocado and condiments of choice.
- Add top bun and enjoy!

Wow, talk about options! My favorite veggie burger toppers are slaw and avocado, hands down! Indulgent but fresh. I love Hilary’s Eat Well, but there are quite a few flavors I haven’t tried – I need to find the Kimchi one!
