Plus, it also involves SunButter, which is made from sunflower seeds and each serving contains 7g of plant-based protein and more vitamins & minerals than most nut butters. How to make SunButter Truffles?
These SunButter truffles are super duper easy to make. You just stir all the ingredients together in a large mixing bowl, scoop and roll into balls, refrigerate or freeze them until theyβre firm and then dip them in melted vegan chocolate.
Ingredients:
Protein Power: I used Chocolate and added a little coffee protein but vanilla also works here.
Flour: I recommend using gluten free oat flour.
Vegan Chocolate Chips: I love using rice milk chocolate chips for the coating but feel free to choose your favorite. You can always coat in one flavor then drizzle on another for the best of both worlds.
Espresso or Instant Coffee: totally optional but if you like or need a little kick, then you’ll be glad you added it.
SunButter: I used Organic this time around, but this recipe can be made using most varieties of SunButter (natural, no sugar added or even crunchy).
Liquid sweetener: Maple syrup, agave or brown rice syrup rule in this recipe.
Vanilla: gives that extra bit of flavor.
Crisp cereal: I like a little crunch in my bite and for that I like adding a sprinkle of brown rice cereal. For smooth truffles, simply omit.
Optional shredded coconut: Makes this vegan truffle taste like a candy bar which I totally love!
Instructions
- In a medium sized bowl, add your dry ingredients, chocolate protein, flour espresso and whisk.
- Add in SunButter, maple syrup and vanilla extract. This is where you’d add in the coconut as well if using.
- Stir ingredients together and if necessary, use clean hands to “knead” or incorporate it all together.
- Roll small pieces of dough together to form a ball ( I like mine a little smaller and bite-sized).
- Refrigerate while melting chocolate then dip in melted chocolate, and place on a tray lined with parchment paper. Either refrigerate or freeze to set the chocolate.
The most difficult part of “not” baking these bites was simply trying to keep my oldest son’s hands off them long enough for me to get some photos. Do you know how hard it is to keep a teenage boy away from food? Goodness gracious! You’d think that child hadn’t eaten all day.
Thankfully, you can whip up an extra batch in no time if you have a hungry teen in your home too.
How to store SunButter Truffles
Place the left over truffle bites (you know, the ones your kids haven’t gotten into yet) in an airtight container or a ziplock bag and keep them at room temperature for 2-3 days or refrigerate them for 7-10 days. They can be served at room temperature or right out of the fridge which is what I prefer. If you are making these in the Summer, you’ll definitely want to keep them refrigerated so the outside coating doesn’t melt.
You can also freeze them, just place the container in a freezer bag and squeeze out all the air. Freeze for 2-3 months and thaw at room temperature overnight.

Ingredients
- 1/2 Cup Vegan Chocolate Protein Powder
- 1/3 Cup Oat flour (can sub with extra protein powder)
- 1 Tablespoon espresso powder or instant coffee - optional
- 1/2 Cup Organic SunButter
- 1/3 Cup Maple syrup (Or liquid sweetener of choice)
- 1/2 Teaspoon Pure vanilla extract
- 1/4 Cup Brown Rice Crisp cereal
- 1/4 Cup Enjoy Life Rice Milk Chocolate Chips for coating
Instructions
- In a medium sized bowl, add your dry ingredients, chocolate protein, oat flour and ground coffee, and whisk.
- Add in SunButter, maple syrup and vanilla extract. Shredded Coconut optional.
- Stir ingredients together and if necessary, use clean hands to "knead" or incorporate it all together.
- Roll small pieces of dough together to form a ball ( I like mine a little smaller and bite-sized).
- Refrigerate, then dip into melted chocolate. Place of parchment lined paper then refrigerate until firm coating.
Notes
If you'd like a little more chocolate, melt "safe" white chocolate chips for 30 seconds, stir then repeat if needed. Β Drizzle onto chocolate covered truffles and add sprinkles if desired.

Oh wow, these look excellent! Never seen oat flour around but I’m sure if you blend it beforehand it would work ok as well?
