A deliciously creamy, vegan coconut chocolate chip ice cream, dancing with homemade swirls of caramel. {Vegan, Paleo, Gluten Free, Dairy Free, Nut Free}
Homemade ice cream is the best, especially when it’s SO easy to make! And by easy, I mean, you only need a handful of ingredients and about 20 minutes to make this dreamy ice cream.
Coconut Cream
Canned coconut cream is one of my favorite cheats for making the most creamy vegan ice cream.
Just don’t get coconut cream confused with coconut milk. Both can be purchased in a can, but the main difference is that coconut milk will have a thick layer of coconut cream with the watery coconut milk underneath, but coconut cream is only made of that thick, spoonable cream. That delicious cream is what we are using in this ice cream recipe.
A Healthier Ice Cream
By making your own ice cream at home, you not only control the type of ingredients added (allergens, sugar, no corn syrup or preservatives) but also you get to create the perfect flavor combination.
Which means, in my perfect world, a little bit of chocolate was required. But to throw this ice cream over the top, a little caramel sauce was the answer to adding that layer of indulgence. Not just any caramel sauce, thoughβ¦ itβs homemade caramel sauce.
The Ingredients
So basically, these are the ingredients you will need to make this amazing, Coconut Chocolate Chip Ice Cream.
- Coconut cream
- Liquid Sweetener (such as brown rice syrup or maple syrup)
- Vanilla extract
- Sea Salt
- Vegan Chocolate Chips (such as Enjoy Life Foods mini chips or try this Homemade Sugar Free Chocolate Chip recipe from All Day I Dream About Food)
- SunButter (it’s the secret ingredient to our caramel sauce)

Vegan Coconut Chocolate Chip Ice Cream with Caramel
A deliciously easy, allergy-friendly recipe for creamy vegan coconut chocolate chip ice cream, infused with creamy caramel and bites of chocolate bursting through. Vegan, Paleo, Gluten Free, Dairy Free, Nut Free.
Ingredients
Nice Cream Ingredients
- 1 (14oz) can coconut cream (refrigerated overnight)
- 3Β bananas, sliced and frozen
- 1 teaspoon vanilla extract
- 1 tablespoon brown rice syrup or maple syrup
- pinch of sea salt
- 1/2 cup vegan chocolate chipsΒ (I used Enjoy Life Foods)
- Easy Caramel Sauce (see below)
Caramel Ingredients
- 1 tablespoon SunButter
- 1 tablespoon brown rice syrup or maple syrup
- 2-3 tablespoons non-dairy milk
Instructions
- Add bananas to a blender or food processor. Blend until crumbly. Add coconut cream, syrup, vanilla and a pinch of salt, blending until smooth. Scrape down the sides of the blender as needed.
- Pour into your ice cream maker and follow instructions per model. Mine runs 20-30 minutes (unless I'm impatient).
- Half way through, add chocolate chips and allow ice cream to complete the cycle.
- In the meantime, mix together caramel ingredients in a small bowl and set aside.
- Pour ice cream into a freezer-friendly, airtight container. Add scoops of caramel to the ice cream and then swirl into cream. Scoop into bowls or cones and enjoy!
- You can also freeze for 3-6 hours, or until completely frozen. Allow to thaw for 5-10 minutes before scooping. Enjoy!
