Recipes always come to me at the most inconvenient times. In the shower, in bed or even in the car…basically anywhere I don’t have access to a pen and paper. THIS Brookie Ice Cream Cake was one of those moments.
I was watching the Food Network in bed and got the usual 11pm craving. Instead of jumping out of bed to feed my face, I started thinking about desserts I’d like to make allergy-friendly (not as yummy at the time but the pay-off was worth it in the end). My mind went to life before food allergies, when I use to love to indulge in aΒ warm brownie, topped with ice cream and whip. There was just something about how those 3 complimented each other that made it almost irresistible. I wanted my kids to experience something like that, but a “safe” version. That is when thisΒ Brookie Ice Cream Cake was born.
The Ingredients
Enjoy Life Foods is by far, the star of the show & helped me keep this Top 8 Free. Plus, there is no way I would have made this as quickly if I didn’t have these products. Every product from Enjoy Life Foods (ELF) is Top 8 Free & Gluten-Free. They have everything from Mixes & All Purpose Flour to Chocolate Chips & Cookies and then some. But before we can get to that cake, we must start here!
This Brookie Ice Cream Cake starts with a brownie base. Simply add oil, water to your mix, stir and bake. Easy peasy!
Once its cooled, be sure to cut about 1/4 offΒ the top so you can use that as a second layer.
Here is where the “Cookie” part of this Brookie Ice Cream Cake comes into play. Crushed Chocolate Chip Cookies are added to your first creamy layer whileΒ Crushed Double Chocolate Cookies make the second creamy layer even sweeter. I could have used actual ice cream, but once you see how easy this is, you’ll be making your own instead.
Put it all Together
Once you have your ingredients, you just have to start layering
- Brownie base
- Cookie cream layer
- Brownie pieces
- Double chocolate cream layer
- Then you’ll add your whip cream (So Delicious Dairy-Free is my fav & it’s GF & Vegan)
Although this would be amazing on its own, you can’t experience the full chocolate overload without adding ganache to your Brookie Ice Cream Cake. I mean, nothing says indulge better than brownie, cookies, ganache and whipped cream all in 1 bite! AndΒ case your looking to increase the yum factor, how about using the caramel from theseΒ Homemade Twix Bars. WOW!
Top it off with some more cookie and brownie pieces and you, my friend will be in Brownie Bliss. I promise you that EVERYONE that ate this fell in LOVE! No really! I even had the non-believers asking for more. You know, the ones who don’t think vegan food can taste good, or the ones who can’t believe you can make a delicious dessert without dairy or eggs. One of my friends actually told me that he knows “this Brookie Ice Cream Cake will be in Heaven waiting for him”.

Brookie Ice Cream Cake
Brookie Ice Cream Cake {vegan, gf}
Our allergy-friendly Brookie Ice Cream Cake is made up of delicious layers of Brownie, Ice cream, Ganache & Cookies to "wow" your friends & make you want to skip dinner!Β
Ingredients
Brownie Base
- Enjoy Life Brownie Mix + oil & water, per box
Ice Cream Layers
- 8oz cream cheese, softened (Daiya is Top 8 Free)
- 1/4 C. cane sugar
- 1/4 C. brown sugar
- 3 TB. coconut milk, refrigerated
- 1 TB. vanilla extract
- 3/4 C. chocolate chip cookies, crushed
- 3/4 C. double chocolate cookies, crushed
Chocolate Ganache & Toppings
- 1 Tub CocoWhip (So Delicious)
- 8 oz. Enjoy Life mini chocolate chips
- 3/4 C. canned coconut cream
- Cookies
- Brownie pieces
- More CocoWhip or Chocolate Frosting
Instructions
Make the Brownie:
- Grease an 8" springform pan and line bottom with parchment to remove easily.
- Make brownie batter according to instructions on box in the springform pan. Allow to cool completely.
- Remove sides from pan and cut off 1/4 -1/2 from the top of the brownie. Set aside in another bowl and replace sides of pan to help with layering.
Make the Ice Cream Layers:
- Beat cream cheese until light and fluffy, then add sugars, coconut milk, vanilla extract. Fold in CocoWhip.
- Divide mixture evenly between two bowls.
- In 1 bowl, add the cookie crumbs. Fold to combine. Spread over brownie base then add another layer of brownie, using what you set aside earlier.
- In the other bowl, fold in double chocolate cookie crumbs and spread over 2nd brownie layer.
- Freeze while making ganache.
Make the Ganache:
In a small saucepan, heat coconut cream until it begins to bowl. Remove from heat and add chocolate chips. Stir until smooth & melted. Set aside & let cool slightly.
Finish the Cake:
Remove cake from freezer then drizzle chocolate ganache over edge of cake then fill in the top of ice cream layer and smooth. Pipe a small amount of whip or frosting in the center of the cake then decorate with additional cookie and brownie pieces. Freeze overnight before serving.
