HOW DO YOU MAKE BURRITO BOWLS?
With school and sports in full swing, our dinner routine can be a little hectic which is why we rely on meals like burrito bowls which come together quickly.
- Start cooking the rice (quinoa, cauliflower rice, brown rice) according to package directions whether that is on the stovetop or in a rice cooker. This takes the longest, so just start here!
- SautΓ© peppers & onion in a skillet or add them to a sheet pan with a little oil and taco seasoning then roast in the oven for 15 minutes. The latter is my favorite choice because I LOVE roasted veggies and it allows me to have everything going at 1 time.
- While the veggies are roasting and the rice is cooking, grab your skillet and start sautΓ©ing the package of beefless ground, sprinkled with taco seasoning until browned and hot.
- Heat up the beans and corn. If you prefer the taste of charred corn but donβt want to mess up another pan, just wipe off and reuse the skillet after the βgroundβ is sautΓ©ed.
- Now, all thatβs left is to assemble the burrito bowls! Start with a base of rice and seasoned beefless ground then let each person Make-Their-Own-Burrito-Bowl filled with roasted veggies, beans, tomatoes, corn, shredded lettuce and any other toppings youβd like to include β like guac and jalapeΓ±o.
Then dig in!
ARE BURRITO BOWLS GOOD FOR YOU?
As long as youβre smart about what ingredients you choose, a burrito bowl can be an incredibly wholesome dinner. Ours is well-balanced with plant-based protein, carbs and beneficial fats.
For this recipe, we used:
- Plant-based Protein: These vegan Chipotle Burrito Bowls feature Gardein™ Beefless Ground, but you could also use their Chikβn Strips on nights you want to change it up.
- Rice: Keep it simple or season with a little salt, cilantro and lime juice. You could also use quinoa, brown rice or cauliflower rice in its place.
- Black beans: These add extra protein, vitamins and just structure to your bowl. However, sub with red beans, chick peas or refried beans.
- Corn: Frozen corn in the freezer is a time saver. Add it warmed or char it in a skillet for a smoky sweet flavor. My Fav!
- Onion & Orange Pepper strips: Toss in raw strips or do a quick roast in the oven while “meat” is sautΓ©ing.
- Add-ins: Avocado slices, diced tomato, lettuceβ¦basically whatever else you have on hand for extra nutrients, crunch and texture.

Meal prep? HECK YA! Burrito bowls are an excellent meal prep option if you make them ahead of time and serve later. Just pack prepared food into containers and refrigerate until youβre ready. You can pack it in a lunchbox and eat it as is, or turn it into a taco salad or stuffed burrito.

Vegan Chipotle Burrito Bowl
A delicious copycat recipe for Chipotle's Burrito Bowls filled with Gardein's Beefless Ground, black beans, roasted peppers and veggies, fresh avocado, tomatoes & lettuce. DIY Burrito Bowl Chipotle style. Vegan Gluten-free Nut-free Recipe. Serve in a bowl, in a burrito or lettuce wraps.Β
Ingredients
- Β 1 bag Gardein Beefless Ground
- 1Β tablespoonΒ taco seasoning plus more for seasoning at the end
- 2 cups corn kernels (fresh or frozen)
- 2Β cansΒ black beansΒ drained and rinsed
- 2Β cups white rice, brown rice, cilantro lime rice or quinoaΒ cooked
- 2 red/orange peppers & 1 onion, sliced (you can add these to your bowl raw or bake on a sheet pan for 15 min @350Β°)Β
- Optional toppings: avocado, lime, vegan sour cream, shredded lettuce, chopped tomatoes, guacamole, salsa, jalapeΓ±osΒ
Instructions

- While the veggies are roasting and the rice is cooking, grab your skillet and start sautéing the package of beefless ground, sprinkled with taco seasoning until browned and hot. Set aside.
- Heat up the beans and corn. If you prefer the taste of charred corn but don’t want to mess up another pan, just wipe off and reuse the skillet after the “ground” is sautéed.
- Assemble the burrito bowls once ingredients are prepped and ready ! Start with a base of rice and seasoned beefless ground and follow with roasted veggies, beans, tomatoes, corn, shredded lettuce and any other toppings you’d like to include – like guac and jalapeño.
