Looking for a quick treat to make your guests this holiday season?  Look no further because I have an incredibly easy, deliciously creamy, SunButter pumpkin pie  that you'll want to be making. 

  It actually started out as a non-peanut butter fudge that just didn't turn out solid enough.  But what it did have, was this wonderfully sweet and decadent flavor that I just couldn't resist.  Then that little light bulb in my head went off and all I could think of was remaking it as a pie filling!  And "wha-la" an allergy-friendly, top 8 free, gluten-free & vegan dessert.  Are you ready to get baking?

Vanilla Cupcakes

I am incredibly picky when it comes to vanilla cupcakes.  They can't be too yellow, or too dry or too dense (cuz that would make it a muffin, right?). Vanilla cupcakes are the most basic cupcake to get right, and yet so many people get it so wrong!  It's like the basis for every other cake, is it not? Switch out a few ingredients here and there, and you can have any variation of flavor you like, including chocolate. It's the first recipe I worked on after Xander's allergy diagnosis, 9 years ago. In fact, he was 10 months old at the time and all I could think about what type of cake could he have for his upcoming birthday.  I had 2 months to figure it out.  Thankfully, he mostly used the cake the mash his hands in to, so whether it was good or not, really didn't matter.  However, last weekend my baby Xander just turned 10 and this time, I needed a vanilla cake that would make his party extra special.  That's when I came up with these Light & Fluffy Vanilla Cupcakes.

  What better way to kick off Labor Day weekend, than with football games, end of Summer pool parties and Papas Nachos! What? You've never heard of Papas Nachos before?  Don't worry, I hadn't either until I went to Mexico. But if you like loaded nachos and you like french fries, then your taste buds are in for a treat.  

Sweet & nutty, rich & creamy, warm & toasty, THIS is what breakfast is made of.

  Who has time to make a big elaborate breakfasts every morning?  I know I don't.  Those are for weekend mornings or when we go out (let someone else make the mess!), right? But sometimes, I want to feel like I'm eating a fancy breakfast without putting in all the work and you know, it is possible! That's how these Banana Berry Sammies came to be. I originally called them Lazy Girl Waffles because I was too lazy to make waffles, but Banana Berry Sammies sounds a little more delightful, doesn't it? 

S'mores! Can I have me some more please? I wonder if that's how it got its name? When marshmallows, chocolate & graham crackers are combined, who wouldn't want s'more? I know I do and now that I've added SunButter (my favorite nut-free spread), this Summer treat tastes like a melted allergy-friendly Reese's cup, I really want s'more! How about you? 

After years of cooking corn,  I found a foolproof method that is incredibly easy, unique and simply delicious. Summer corn is sweeter when steamed within its own husks and grilled to perfection Moving around a lot has created an opportunity to try new things and to incorporate different flavors & methods then I had tried before. Take corn on the cob for example.  For most of my early years, I remember hanging out in the kitchen, shucking fresh corn with my mom and/or grandma and then adding the cobs to a pot of boiling, salted water.  I use to love watching the corn go from a pale yellow to a vibrant hue which signaled they were ready to be devoured.  I sure loved corn this way, especially with a big 'ol slab of butter. After moving to Maryland, a friend of mine cooked their corn on the grill and their special little twist, created the best Grilled Corn on the Cob I had ever tasted (Sorry MOM!). This is now my favorite way to make corn, especially when adding a little Sriracha for heat. 

There is something sweet and pure about vanilla cupcakes.  When done right, there is no need for all the icing and fluff because it should simply taste amazing on its own.  It's only when the cupcakes are dry and/or tasteless that you need to add more and more icing or have a cold cup of milk (non-dairy of course) to go with it.   Now, I am not in any way saying to skip the icing, I mean, that is what makes cupcakes look so pretty, but I am saying that you just want it to taste good on its own, and the icing is simply the bonus!

"Sriracha cauliflower wings are my Bae",  or at least that is what my daughter says.  This is HUGE as it is coming from my not completely vegan child who has labeled herself as a "chikatarian" (she likes Chik-fil-a basically).  I know, this is technically a vegan food blog, but to be perfectly honest, I just cannot make everyone eat as I would.  Now, when we are home, I only make 1 dish and everyone eats that 1 dish, but when we go out, they are all free to make their own choices.  Thankfully, they no longer go crazy when they order and have realized how certain foods make them feel as well as realize how eating foods affects other creatures, but chicken, I can't quite get her to give up yet.

Thankfully, my kids all LOVE vegetables and so getting them to eat veggies is really easy.   Cauliflower is one of their favorites, whether its raw or cooked and we've used this veggie as a substitute for rice or mashed potatoes and even in shrimp cocktail.  It also works well as "chicken" for making wings.   I mean, it's better than eating "fake" meat made of weird ingredients, right?

HOLA!  Buenos dias? Having just returned from Mexico on family vacation, I am completely inspired to share an incredibly easy to make, inexpensive, protein rich, Breakfast burritos.  But before I do that, I just have to say how impressed I was with our trip to Cabo. Beyond it just being so darn pretty, and not mention relaxing, everyone we met were kind & polite, even when we passed on buying their goods they were selling on the marina.  What really blew me away, is that almost every restaurant we went to for dinner, asked right off about food allergies, even the gentleman taking our reservations! Way to make a food-allergy-mom feel more comfortable!   I can't remember the last time one of my waiters here actually asked about any potential allergies.  Needless to say, it was a wonderful time away and I am thankful everyone took such good care of us.
