Isn’t cookie dough the best, especially chocolate chip cookie dough?
How about knowing that you can by-pass the whole part about cooking it in the oven and just devour it immediately?
Ya, that’s right, INSTANT GRATIFICATION my friends!
I know, a little waiting won’t hurt us, but that’s what cake is for, right! We want it now and we want Chocolate Chip Cookie Dough Bites.
Plus, sometimes you NEED it now, seriously! When unexpected company drops by, when you are invited to a last minute get-together, or you totally forgot about the dessert you were suppose to bring to a work function. For us allergy parents out there, how about when you get that call from school that they are celebrating a birthday party & you don’t have any special treats for your kiddo? I mean, things happen and when you need a quick treat, then these bites are for you!
I used all allergy-friendly, vegan ingredients for this cookie dough.
Earth Balance, soy free butter
Enjoy Life Mini Chocolate Chips
and as always, a little sea salt & vanilla extract.
All those “safe” ingredients get blended together in your stand mixer so all you have to do is scoop & roll!
Wanna know a secret?
You can even make this dough into a scoop-able, spreadable dip! Just add up to 4 tablespoons of water, a little at time until you’ve reached the consistency you want for all your dipping pleasure! SO not only can you enjoy our cookie dough in a cute little grab-n-go bite, like Veggie Balance does with her Edible Cookie Dough, BUT you can also use this as a dip for your apples or as a spread for your favorite graham cracker squares. YUM!

If you love eating raw cookie dough, then you’ll love having 2 options with this no-bake, chocolate chip base. Make it as a spreadable dip OR enjoy them rolled into little bite-sized cookie balls.
1/2 cup Earth Balance butter, softened (Soy free, vegan)
1/2 cup light brown sugar, packed (Wholesome brand)
1/4 cup coconut palm sugar (Wholesome brand)
3/4 cup all-purpose flour (Bob’s Red Mill Unbleached White OR GF Oat Flour)
1/4 fine teaspoon fine sea salt
1 teaspoon vanilla extract
1/2 cup mini chocolate chips
3-4 tablespoons water (for Dip option)
In a medium bowl, cream together the butter and sugar. Stir in the flour, salt & vanilla then fold in chocolate chips.
To make into cookie dough bites, simply omit the water and scoop tablespoon sized pieces. Roll into balls then refrigerate until ready to serve.
**Can also use this as a dip by adding 2-3 tablespoons of water at a time, until spreadable.
- If you have another GF flour blend you like, feel free to experiment. Other options that would be great include coconut flour or almond flour (if you don’t have a nut allergy)
