This super easy Vegan Chocolate Pie with Caramel Popcorn Crust is the rich & velvety, no-bake dessert you were dreaming about.

Next weekend is my birthday and I have no idea what kind of dessert I’m going to make myself 🤣(seriously ya’ll, that’s the life of a food blogger).
Since this Chocolate SunButter Popcorn Pie is super easy to make, surely someone will make it for me if drop the enough hints, right?! I can print out the recipe, leave it on the counter and even highlight it with arrows to get my point across…what do you think?

I mean seriously, itβs everything a dessert should be {and then some}. Creamy, rich chocolate ganache-like filling, sitting on top of a caramelized popcorn crust, topped with a luscious SunButter drizzle. This Chocolate Popcorn Pie is pure dessert perfection, plus it is gluten-free, dairy-free and top 8 free!
Sounds like you need to be making this too…. birthday or not!

This dairy-free Chocolate SunButter Popcorn Pie was born shortly after seeing Tasty ‘s Chocolate Peanut Butter Popcorn Pie video . It got me thinking “I can make this allergy-friendly and vegan”….and so I got to work!
The first time I made this, it was a bit of a mishap. I tried sticking close to the recipe, with vegan ingredient swaps and it just didn’t work out. The vegan marshmallows wouldn’t melt, the popcorn was clumpy and gross & I just had to stop there before wasting more ingredients.

Then it came to me in one of those cartoon-like thought bubbles “CARAMEL POPCORN”! It was like the dessert gods were looking down on me. Sweet & salty, smooth & crunchy, chocolate-y and caramel-y, especially delicious and completely irresistible!
I may just make it now and celebrate my birthday early!

Easy to Make Allergy-friendly Chocolate Pie
Iβm not kidding when I say that this gluten free vegan chocolate pie is easy to make. The allergy-friendly popcorn crust takes about 20 minutes on the cooktop but no baking required. The chocolate filling is a simple ganache, made from just 2 ingredients, CocoWhip and a mixture of chocolate chips.
Can you believe something so pretty was so easy to make?

Chocolate Pie Substitutions & Tips
Pre-made popcorn: Don’t have time to pop your own popcorn? Use a bag of SkinnyPop and pour your homemade caramel coating over it (this will save you a step).
Chocolate Filling: If you have a coconut allergy or cannot find CocoWhip then you can make the filling. Gently folding together melted chocolate chips & homemade whip cream. Use this recipe 👉🏼1.5 cups heavy cream whipped until stiff + 3 tablespoons powdered sugar + 1 teaspoon vanilla extract.
SunButter Drizzle: Not required but oh so good! I love how it adds a little OOMPH to this pie. Feel free to sub with another nut-free spread or pull out your fav PB if you don’t have an allergy.
Top it off: Ohh, you thought that SunButter was the topping? Technically it is, but a dollop of whip or ice cream will have you singing 🎤Everything is Awesome 🎼!

Yes, it is decadent but I’m ok with that because food allergies and/or restrictions shouldn’t be about deprivation. It should be about delighting our taste buds, inspiring beauty, and bringing excitement and joy. Like this insanely decadent gluten-free/vegan chocolate popcorn pie brings.
Vegan or not, this chocolate popcorn pie is a show stopper!
Happy Birthday to ME & a very Merry Un-Birthday to YOU!
