Β Allergy-friendly Mousse made easy!
Today, I’m including a recipe I’ve been sitting on for a while. Not sure why I waited so long, but probably because I just couldn’t get the darn photos to turn out like I had wanted. Oh well, this SunButter Mousse recipe MUST go on!
These adorable little mousse cups are a great way to impress your kiddos and adults all the same, because it looks really fancy and complicated, but itβs actually amazingly easy to make. The secret is ingredient is SunButter, which you can just blend with canned coconut milk and confectionerβs sugar to make a light, fluffy mousse in literally minutes.
This easy SunButter mousse is delicious all by itself and actually started off as SunButter Shooters (cute huh?) Β Β Knowing that the mousse is really rich, I served theseΒ in small votive holders (don’t worry, I’ve never put candles in these) which are also perfect for appetizer or hors d’oeuvres like our Gazpacho Shooters.
The trick for serving it this way is to grate a chocolate bar into tiny shavings, dip the rim in water then press into the shavings. The mousse is then piped into these little cups, topped offΒ with a few extra chocolate shavings, and you have a velvety confection that looks like you spent hours instead of minutes.
To make this SunButter mousseΒ really special, and Easter approved, I served it in little glassΒ cups found in the $3 section at Target. I just love how there is already a little handle on these to tie into the whole “basket” look.
But I needed something else because these cups were a little larger than my votives and I wanted to bring in some other texture and flavor since the mousse itself is so rich. Crushed cookies and candy! That’s exactly what this needed.
If Oreos are safe for you, then you can use these for the base and topping. They are dairy-free, egg-free and considered vegan. As for nuts, well there are no nuts in them, but the label still says the facility has nuts. Therefore, use what you know is safe. If you have a gluten allergy, I really like K-Toos or Glutino but again, read labels because they only claim to be GF. For a completely allergy-free option, Β use something like Enjoy Life Foods Chocolate Chocolate Chip Cookies. Those are Top 8 Free, and amazing.
To make it Easter themed, I neededΒ some type of bunny, egg or spring-likeΒ topping because gummy worms just wouldn’t do. This isn’t a Dirt Pudding after all, this is Easter Mousse :). I swear I walked up and down the holiday candy aisle FOREVER just reading labels. I was hoping that just maybe, Target had an allergy-friendly sign like they did for Halloween but no such luck so I made myself comfortable and started reading. Not only do the candies have to be allergy-safe, but I want them to be vegan as well. I don’t want yucky gelatin in anything we eat.
I ended up finding some cute little Easter egg gumballs (contains soy), Dum Dum Lollipops (contains soy) in the shape of bunny’s, THENΒ I remembered Annie’s organic gummies. Why didn’t I think of that before? They are vegan, gluten-free, and already in the shape of bunnies. SCORE!
Once you have your SunButter Mousse made, just start layering. Fill the bottom of your cup with 2 tablespoons of crushed chocolate cookies, pipe in (or use a mini ice cream scoop) the mousse then top with some more crushed cookies. Add whatever adorable little garnishes or Easter toppings you choose and prepare for smiles! If you are making this for a different holiday, change out the toppings, use mini chocolate chips, drizzle with ganache, or how about adding another layer but use So Delicious Coco Whip (I’m doing that next time!).

SunButter Mousse Cups
Allergy-friendly SunButter Mousse made easy with only a few ingredients. A perfect treat for your holiday table. v,gf,nf
Ingredients
- 1 So Delicious coconut milk regular culinary milk
- 1/2 cup smooth SunButter
- 2 tablespoonΒ pure maple syrup
- 1/4 cup confectioners sugar- Wholesome brand is vegan
- 1/4 fine sea salt
Option 1-
- 2 cups crushed allergy-friendly cookies (Enjoy Life, GF sandwich cookies, your choice)
- 2 oz dark chocolate bar (use zester to grate into fine pieces)
- cold water in a small shallow bowl
- 1/4 chocolate chips
Instructions
SunButter Mousse
Refrigerate culinary milk overnight
Scrape cream into stand mixer
Add in SunButter, syrup and sea salt then beat on high until creamy. Add confectioners sugar a little at a time to thicken.
Refrigerate until ready to use.
Option 1-
Crush cookies into fine pieces and add 1-2 tablespoon to the bottom on serving cups. Layer with SunButter mousse then sprinkle with extra crushed cookies.
Option 2-
Grate chocolate onto parchment paper into fine pieces.
Dip rim of mini dessert glasses into water then into chocolate sprinkles. Repeat.
Fill piping bag with SunButter mousse then pipe into glasses.
Garnish with extra sprinkles of chocolate shavings or a few mini chocolate chips.

This looks so yummy! I love sunbutter, and this mousse looks fabulous. We aren’t dairy free so I’d probably go for some goodie girl midnight brownie for the cookies- gluten free, egg free, and peanut free :).
