My husband’s request last night before drifting off to sleep was that he was craving Blueberry pancakes and bacon (needless-to-say, my husband is NOT vegan). So this morning after nixing the 6mile run I had planned, I opted to make pancakes instead. Its a good trade-off, right?
Thankfully my daughter, Cayden was up for the task and wanted to jump right in to help while the boys just decided to play video games. That’s ok though for today it was Mother-Daughter bonding. It is priceless being able to spend one on one time with her as well as teaching her how to cook and bake. Both are things she will take with her as she grows and starts her own family one day (although we are still at the phase that she is ALWAYS living with us).
So after putting my Keurig to work and taking my first sip of coffee, I was prepared to start. And I have to tell you, my most favorite NEW dairy free creamer has got to be SO Delicious Coconut Creamer- Barista style. It is by far the most tasty one out there right now. Ok, back to the rest of breakfast!
So Blueberry Pancakes were made, incorporating several recipes to make them extra tasty. I also made by scrambled tofu which the kids love and heated up some Turtle Island Vegan Sausage to round out the traditional breakfast for us. And because I love my husband so much, I did make my husband his bacon .
More than having a great breakfast, its the experience of all being able to sit down together, talk about the day, our week, our plans, and just spend great quality time together. I can’t ask for a better way to start the day.
