What’s a girl to do when she’s having a cookie craving? MAKE COOKIES! I found a recipe online that sounded delicious and I was waiting for the perfect time to make it. As the boys were playing “Little Big Planet”, my daughter was at a sleepover and my husband was fiddling with his new car…..I had a choice. I could either do another load of laundry, or make cookies. The cookie option won of course.
8 oz. Enjoy Life Chocolate Chips
4 TB. Earth Balance Butter (1/2 stick)
2/3 C. All Purpose Flour
1/2 tsp. Baking Powder
3/4 tsp. Himalayan Sea Salt
3 tsp. Ener-G Egg Replacer + 4 TB Warm Water
3/4 C. Packed Dark Brown Sugar
1 tsp. Vanilla Extract
12 oz. Enjoy Life Mega Chunks (chopped slightly)
Preheat oven to 350 degrees. Line 2 baking sheets with parchment or silicone mat.
Combine chocolate chips and butter in a heatproof bowl and set over a pot of simmering water (you can use a dbl boiler also). Heat until the chocolate and butter have melted and smooth! Stir often.
In a medium bowl, stir together flour, baking powder and salt.
In a larger bowl, use and electric mixer and combine egg replacer, brown sugar and vanilla. Beat on medium high until the sugar is dissolved. Reduce to low speed and incorporate the melted chocolate blending well.
Add dry ingredients and mix until combined.
Fold in larger chocolate chunks.
Drop by large spoonfuls about 2-3 inches apart.
Bake until cookies are slightly soft in the middle and cracked on top (mine took 15-18 minutes).
Sprinkle with Sea Salt and let cool on baking sheets additional 10 minutes. Cool on wire rack after.
The original recipe had the baking time as 10-12 minutes but mine were super gooey and there was no way they would stay together! But usually with all the allergy-safe modifications to a recipe as well as baking in a convection oven, I usually can expect some baking time changes as well. Regardless, after 15 minutes of baking, and 10 minutes of sitting,,,,,,they turned out AMAZING!
Xander came running from upstairs asking if I was making brownies and wanted one as soon as it was taken out of the oven, and every waking hour after that! Even my husband who lacks a sweet tooth, grabbed one when he came and told me they were delicious.
But beware, everyone will want one! And may even try to take it from you!
So make sure you keep a secret stash for yourself in case another craving comes back the next day.0
