Last night my husband and I joined our friends at The Stock Pot here in Tulsa, OK to be a part of a Raw Food demonstration and dinner by Chef Matthew Kenney. I cannot tell you how excited I was to be going to this event and the whole time there I felt like I was on Cloud 9.
This past year and a half, I have been playing with food, learning new recipes, trying new things and reading a lot about different ways of eating. We already had removed dairy and eggs from our diet due to Xander’s allergies years ago but this past year I have been eating a mostly vegan diet. Lately though, I have been playing with some “raw food” recipes and have really enjoyed the taste, texture and overall freshness that comes from it. So when we had the chance to go last night, obviously you can see why I was excited.
In 2009 Matthew had opened a Raw restaurant in OKC at Classen Curve, and I cannot believe I didn’t know that! I’ve even read through several of his books and never realized he was only 1 1/2 hours away. Guess where I’ll be taking a trip to soon? And I know the food will be awesome because he created several of the dishes for us last night! We started with Beet Carpaccio (heirloom beets ‘en sous vide’, cashew ‘goat’ cheese, pistachio, frozen lemon oil), then moved onto a Classic Heirloom Tomato Lasagna sun-cured tomato marinara, macadamia ricotta, hand-cut pesto) and finished with an Avocado and Cocoa Pudding! Obviously to eat this way, there are a lot of changes that have to be made but I loved hearing them talk about just trying to incorporate it into your daily life as that will start to make a big difference. Having a glass of water with lemon first thing in the morning to help your digestion for the day, a green juice or smoothie for breakfast or lunch, a big veggie salad without all the processed dressings, fresh fruit for dessert, all of these things are great ways to start incorporating raw food into your diet.
So with that, I thought I’d share a recipe to start your morning off right! (Thanks mom for the picture!)
1 frozen banana
1 C. frozen berries
A couple handfuls of baby spinach or kale
1 C. pomegranate (or cranberry) juice
1/2-1 C. almond milk (homemade if you wanna do it raw)
1 T. ground flax seed
1 T. Vega protein or hemp powder (both are raw)
Put all ingredients in blender, liquids first, then puree till smooth.
NOTE: Add a little more almond milk if not blending well or would like it a little smoother.
