Chocolate Chia Pudding

Description

Chia seeds, cacao and coconut milk turns into an extremely delicious, Allergy-friendly breakfast pudding or dessert.

Ingredients

  • 6 pitted Medjool dates
  • 1/2 C. hot water (for soaking dates)
  • 1 C. Coconut milk
  • 1 1/2 TB. Cacao powder (unsweetened cocoa also works)
  • 1/2 C. Chia seeds
  • pinch of sea salt
  • 1/2 tsp. Vanilla extract
  • 2 C. Coconut Milk

Instructions

  1. Soak dates in 1/2 Cup hot water for 10-15 minutes.
  2. Blend together, dates, soaking water, coconut milk, cacao powder, salt and vanilla then blend until smooth.
  3. Transfer to a bowl and add chia seeds with additional coconut milk. Whisk to blend.
  4. Cover and refrigerate 8 hours or overnight.
  5. Whisk once or twice in between .
