This creamy potato soup is feel good, comfort food to keep you warm and bring a smile to your lips.

This soup is comfort food at its finest. Rich & velvety, dairy-free potato soup. Crazy Oklahoma weather!  Last week it was "puffy coats, layers & boots" kinda of weather and this week, it's been hitting the 70's!  Is it like that where you live?  Although I love the warmer weather and the way the sun feels on my face, I do like to take advantage of the cold days by making foods that are extra rich & comforting, that warm you from the inside out, like this Creamy Potato Soup

Gluten-free Cake with fresh blueberries will confuse your senses but delight your mouth.  As my oldest stated, "This smells like graham crackers, looks like a cookie but it's a cake!"

blueberry cake cover Sometimes, confusing your senses is a good thing!  You smell the spices of cinnamon, nutmeg, and ginger swirling through the house and it reminds you of graham crackers.  Then you see these 5 mini cake pans cooling and at first glance, the size of the pans and the fresh blueberries remind you of a large chocolate chip cookie.  BUT WAIT, it's actually cake!  Can that be right?  Is it actually blueberry banana cake that smells like graham crackers?  Yes, my friends, that is right.

Eating dirt won't hurt you! Really!

Thanks to my friends at Enjoy Life Foods & So Delicious, you too can make your own allergy-friendly Dirt Cups. Trust me, this is quite a treat for the kiddos and if you don't have kids, that's ok too.  Nothing like making a dessert to make you feel young again.

Toasted Oat & Yogurt Bowl

I'm going to take you back for a moment (some of us a little farther back) to remember your childhood and what your mother or father would tell you about breakfast.  They probably said that it was the most important part of the day, right?  And,,,, more than likely, we tell our kids the exact same thing, but do we actually "eat" what we "preach"?

Breakfast is designed to supply a third of the macro and micronutrients your body needs to run without a hitch.  It prevents growling stomachs, low blood sugar shakiness, or wandering attention to keep you from nailing those big goals you’ve made for yourself.

So what are you eating each morning to prevent those things from happening? A cup of coffee gulped down on the go? A sugary donut or muffin eaten at your desk? Nothing at all?

Your body deserves so much better than that, and so do you!

GF blender pancakes

Some mornings call for oatmeal, others call for muffins, but weekends, absolutely, require pancakes!

Weekends were always my favorite as a child.  Waking up whenever I wanted to (which was ALWAYS early), watching Saturday morning cartoons (the ONLY time cartoons were on) and enjoying the smells coming from the kitchen as Mom was making our BIG family breakfast.  Back then, that consisted of eggs, & bacon (neither of which I eat now) and best of all, Pancakes! Oh, how I love pancakes.

If you're new to the blog, then you've missed some other pretty sweet pancakes.  Berry Smoothie Pancakes (simple to make, just mixed in your blender) Gluten-free Pumpkin Spice Pancakes  (bringing in the flavors of the season),  Chocolate Chip Brownie Waffles (it's an oldie on the site, but I included these because waffles are basically pancakes with syrup traps) & Banana Corn Pancakes (another gluten-free, naturally sweetened pancake).

For another delicious blender pancake, try these Flourless Carrot Cake Yogurt Pancakes from Cotter Crunch. They are gluten-free and if you have a dairy allergy, just use a coconut based yogurt like So Delicious.

This time, I want to share with you another pancake that you mix up in your blender, Fluffy Gluten-free Blender Pancakes.

Berry Smoothie Pancakes

What if I told you that making pancakes was as simple as making a smoothie, would you believe me?

Well,  I surely wouldn't lie to you about this one.

Berry smoothies are one of my absolute favorite, post workout drinks.  It's also my sons favorite breakfast options, so I was messing with an idea of starting with a smoothie then adding to it for a naturally sweet, allergy friendly (dairy, egg & nut free), filling breakfast.  Then "tada" the Berry Smoothie Pancake was born!

Chocolate Chip Muffins Collage

CC Muffins

This is the first post I'm sharing that is not completely Vegan (gasp!) as it contains eggs.
I know, I know,,,,,"how could you?".  Well, the answer is simple....I don't want my food allergic child to die.
To some, this may not make any sense, as its hard enough for me to wrap my head around.  For the past 9 years, we have been telling our X-man NOT to eat ANYTHING that contains eggs as it has sent him into anaphylaxis before. But after his last Dr. appointment and another round of skin testing, we decided to challenge egg since his level dropped just so slightly.

Christmas cake Collage

Almost too pretty to eat, but you'll want to anyways! Snowy white Eggnog flavored cake with layers of cranberry glaze for the perfect Holiday blend cake. V & free of dairy, eggs, soy & nuts Each Christmas day, we begin by having cake for breakfast. It's become our family tradition and way of celebrating the "reason for the season" before the gift opening begins.

For years, the kids would help make the cake and decorate it but as they are getting older their calendars are now full of activities and sports and I've started making the cake on my own.  I'm pretty sure I could still make it happen and have them help, but I kinda like the quiet in the kitchen and being able to have a cake without funfetti sprinkles or multi-colored globs of icing everywhere.

Deliciously dairy-free Hot Cocoa mix, perfect for 1 mug or 10. Top 8 free & vegan

Deliciously rich, hot cocoa mix. Top 8 free "Ohhhhhh, the weather outside is frightful....but this Cocoa's so delightful,,,,."

To be perfectly honest, the weather outside is B-E-A-U-tiful  (60 degrees and only 5 days away from Christmas) & the Cocoa is still so delightful but this doesn't make for a great song, does it?

Regardless of the unseasonably warm weather, December holiday festivities have continued, the latest event being the showing of The Polar Express at my son's school that included a special delivery of Hot Chocolate for their viewing. I'm pretty sure most parents wouldn't even blink at hearing that but for us Food Allergy Mom's, it's a completely different story, and thankfully, my son has a teacher who called and gave me a "heads up".
