Salt and vinegar dress up these sweet potato bites for a mouth watering, tangy & delicious take on a classic potato chip. My salt & vinegar love affair started back when I was a child in Canada.  I used to love the Hostess brand with little devils on the front of the bag.  Those seemed to pack the most punch and made my mouth pucker more than any other.  I'm pretty sure there was a time or two that I ate so many chips that I could no longer feel my tongue!  Despite both the pain and delight I put my mouth through, my love affair continued.

I'm not a fan of rainy days, but today, I'm not going to complain.  It's actually been raining for several days now but its turning everything green and beautiful again.

My office window faces out back, and although the sound of the rain  pouring down is quite loud, so is the sound of the birds out back.  The robins, doves, chickadees & cardinals are all busy, singing, chirping, flying around and eating from my bird feeder.  There is even a mamma bird who made its nest in my hanging garden and now her babies are finally popping their heads out and flying around.  So, so cute.

Why am I telling you this?  Because it is 1 of the reasons why I love Spring.  This season is just full of life and color.

Just like my Gazpacho Soup ....like my comparison?  Loaded with fresh veggies, raw, unprocessed, did I mention, fresh?  I mean, you can't get much better than this.  This soup is FULL of life-giving, nutrient rich veggies and vibrant color.

It's funny how much we like to categorize things and put it in a neat little box, unfortunately, it just doesn't really work that way.  Most things are more complicated than that.

Take diets for instance. There are over a 100 different dietary theories (many piggy-backing off of another) which I studied for my health degree. What I learned from this was that there is not a 1-size-fits all.  Kinda like how every girl hoped they could fit into Cinderella's glass slipper and yet, it was made ONLY for her!

I know what your thinking, "what does this have to do with Pie Crust?".  Well let me tell you!

Sweet mango & mashed avocado is heavenly, especially with the added crunch of jicama in these delightful spring rolls. Spring Rolls I absolutely love looking out to my back yard through our bay window.  Although the trees are bare and the grass is brown, the site of beautiful red cardinals grazing off the bird feeder, all but makeup for the lack of color due to winter months. And although it is still a little chilly some days, the sunlight warms the room and reminds me that Spring isn't too far off. This sunlight, not only makes this the perfect sitting area for gazing, but it also makes this the perfect place for ripening those stone fruits not quite recipe ready.  The mango and avocado I recently purchased from the market have patiently been sitting on the table, just waiting for the sun to ripen & sweeten them up for the perfect recipe. Meanwhile, as the sun was doing its thing, there was this wonderfully, crunchy jicama just waiting to join the party as I had something wonderful in store for them. I am officially back into the swing of things.  The kids are all back to school, I have returned from my end of summer trip, full-time work has begun again and all is right in the world!    For me, it's really just a matter of there being more structure in my days that makes me enjoy this time so much. Of course, with all the added activities, including early mornings, it can be overwhelming, especially when some of us may not have even bothered with an alarm clock all summer.  So, I wanted to help you out a little, so you can start your day off in an EASY and HEALTHY way.
