Grocery shopping for a family with special dietary restrictions has gotten easier over the years.  I have found that it is safest to stay on the outside of the aisles and stick with mostly fruits and veggies.  Once I make my way toward the center of the store it is filled with all kinds of processed foods and very little of them are safe for our little guy. Occasionally you find a specialty item that seems like a life saver but for the most part, it's a tricky time walking through those areas, especially when it comes to Protein Bars.

Garfield is not the only one who LOVES lasagna!

My oldest son Zac is becoming a bit of a foodie. Maybe its because he's been listening to me for all these years talk about food, or having them help me in the kitchen. Maybe it's because he's taking a Food Prep class in high school this year and is enjoying being creative in there.  Maybe it's just because he likes good food.  :) Whatever, the reason, it makes me proud to see him enjoying the tastes & flavors of REAL, home-cooked food.  Usually, he's the first to request certain dinners as well, especially when we've been in the season of eating out a little more than we should. (I know you've all been there!).

Sometimes, it's a request for chili, sometimes enchiladas, but most of the time, it's lasagna. Vegan Lasagna to be exact. This recipe by far is his favorite and was so loved by others, it was included on Buzzfeed, much to my kiddos delight.  However, sometimes I just get bored with making it the same way and decided to turn this recipe into Easy-to-serve, Roll-ups.

These cute little rolls, didn't take any longer than it would layering a big pan of traditional lasagna and I loved that each bite, was full of flavor and noodles. Kind of like when you eat from the center of the lasagna pan. 

Dragonfruit Strawberry Jam

I think I am obsessed with chia seeds.  I throw them in smoothies, sprinkle them on sunbutter & banana sandwiches, use it as an egg replacer, make puddings and overnight oats with them but not once have I tried using them to make jam, until NOW! 

 If I only knew just how easy this was, I really would have done this a long time ago.  

No boiling water, no canning, no tools. Simply fruit, maple syrup and chia seeds.  That's it! 

How do you celebrate completed your Dairy Allergy Treatment? With Vanilla Bean Ice Cream of course! 

This Monday, we celebrated Xander's first completed week of OIT, Oral Immunotherapy, specifically for his dairy allergy. The goal of oral immunotherapy is to provide a long-term solution for people who have food allergies to egg, milk, peanut and/or wheat. Since Xander has allergies to all 4 (but first 3 are deadly), we are starting 1 at a time and dairy is first on the list to tackle.  At the end of this 5 to 6 month program,  he should be able to consume any of the challenged foods with no allergic reactions.  The program does this by introducing pre-measured doses of allergen in a solution over a period of 3 to 4 months, progressing to small doses of the food for an additional 2 to 3 months. This then results in tolerance to these foods allowing the patient to consume egg milk, peanut or wheat without any adverse reactions. Our first visit for oral immunotherapy was a full 8 hour process that started with breathing tests & standard check up to make sure he was stable. They then established a line in his vein for emergency epinephrine if needed, and we were praying that it wouldn't have to be used.  Then came his first dose of a very small amount of diluted milk. Blueberry pancakes

Most Saturdays our family is rushing out of the house and heading to the gym, but last night our two oldest children had friends spend the night so we got to take this morning a little more slowly.  And of course, being the type of person I am, I just couldn't let them have cereal for breakfast.  So I brought out my own cookbook/journal (basically where I place all the recipes that I came up with that were successful) and all the ingredients to make our favorite pancakes ever!  And I mean EVER!
