This one is for you Heather!  Here's the Vanilla Pumpkin Swirl Cheesecake you asked for :) Delight & surprise your friends with this allergy-friendly (& vegan) pumpkin cheesecake My friend Heather is NOT  pumpkin lover by any means but she was willing and tried a piece of my Pumpkin Cheesecake (isn't that a real friend?).  Anyways, as it turned out, she ate the whole thing and in fact, made me swear I put this on my blog, pronto!   Then, my husband, who does love pumpkin but is lovingly critical of all things vegan, let me know that this was one of the best desserts I've made. So, if my pumpkin-hating friend and my non-vegan husband rave about this dessert, then I just HAVE to include it, right? Here's to Vanilla Pumpkin Swirl Cheesecake!

Red Chile Jackfruit Tamales

I have to admit that I've always been a little leery of making tamales, I mean, leave it the experts right?  I'm fully confident of making desserts, pastries, and other main dishes but never once have I even attempted to make one of my favorite foods, the tamale. That is, until I was given the chance to check out a copy of Vegan Tamales Unwrapped: A Step by Step Guide to Savory and Sweet Tamales from Dora Stone of Dora’s Table. Then, as fate would have it, I also happened to catch an episode of Diners, Drive-ins & Dives which featured a lady making tamales!  It didn't look too hard.  SO with my new found confidence and ebook in hand, I committed to making Dora's Red Chile Jackfruit Tamales.

One of the things that I love about allergy-free baking is the challenge. I enjoy taking a recipe that is known and loved and turn it into a treat that my son, and others that share his allergies can have. I also love being able to hear my friends rave over something and then hear their shock when I tell them it's vegan. Like Vegan Oreo Truffles. Did you notice in the title it says "Oreos"?  Did you know they are vegan, which means they are free of dairy and eggs as well as any other animal products. Now don't mistake vegan for healthy, however, it won’t kill my kid, and so in that terms, it’s healthy enough.  (I used regular Oreos, but read the labels, because some DO contain milk and may be in a facility that also produces peanut products). Oreo Truffles go back a long time; I couldn't even tell you where it originated from or who gets credit for the original recipe. You may have seen them served on a platter at a party or may have even tasted one (or 3) before. Basically, its crushed Oreos, mixed with cream cheese then coated in chocolate or candy coating. Tastes amazing, but absolutely NOT what you want to hand anyone with food allergies or certain restrictions. Here’s where I come in, making this something you now CAN eat.

This is obviously something close to my heart due to my son's food allergies and my vegan lifestyle. Get-togethers, birthdays, and holidays can be difficult for us but it works two ways and I also know how difficult and stressful it can be for the person hosting as well.
