Dragonfruit Strawberry Jam

I think I am obsessed with chia seeds.  I throw them in smoothies, sprinkle them on sunbutter & banana sandwiches, use it as an egg replacer, make puddings and overnight oats with them but not once have I tried using them to make jam, until NOW! 

 If I only knew just how easy this was, I really would have done this a long time ago.  

No boiling water, no canning, no tools. Simply fruit, maple syrup and chia seeds.  That's it! 

Banana Bread French Toast The end of Summer can go several ways. a. Mom's and Dad's everywhere are numb to the sounds of arguing kids, tapped out of resources to go places to keep the kids busy, drive past the library instead of forcing them to go inside and find a good read,  and find delight in the hours of video game playing as long as you some "alone time". b. Mom's and Dad's are savoring every last-minute with their kiddos, taking last-minute trips, swimming every chance they get and mentally preparing for the first day of school (cry now so you won't have to in front of the children).

Cheesecake (vegan & GF) Everday seems to be a Food Holiday.  This month alone, we've had Vanilla Ice Cream Day, Bagelfest Day, Milk Chocolate Day and even Hot Dog Day to name a few.  But did you know that today is National Cheesecake Day? Rich & creamy cake made with several big blocks of sweetened cream cheese, baked on a buttery graham cracker crust  and topped with whip cream. Oh my!   Then consider all the flavors that can be blended in this creamy goodness and the toppings you can add to it,,, its a dessert with endless possibilities.

Avo Open Faced SandwichOne would think that our home is constantly full of sweet treats from the posts I share. And although that is partially correct, the other 3/4 of our day is filled with amazing fruits and veggies, beans and legumes.  So, for the sake of showing that we do actually eat healthy (I mean, I am a Health Coach after all), I wanted to share some of my "go-to" avocado sandwiches.       The first is SUPER easy and a lower carb option.
