During this years' Christmas party, I made a batch Hasselback Potatoes for the first time using baby sized spuds. I barely had time after they came out of the oven to sneak a pic or 2 because they were gobbled up, right away.  Needless to say, I just had to make them again then again until finally, no one was around to eat them (except me and I may or may not have eaten 1 right out of the pan).

I tell you this because these little munchies made everyone happy!  Hubby, kiddos, guests...really everyone.  Because I only share the "hits" not "misses",  I was determined to get this recipe with you before New Years Eve.  Then I realized...tomorrow is NYE!!! WOW.  SO in order to get this out in a timely manner, this is going to be short and sweet.  Sorry.... no long stories, no wordy explanations, just pictures and this Hasselback Baby Potato recipe.   You have parties to get to anyways, right?

Satisfy those cravings with a perfect blend of salty & sweet cookies. 

You are just minutes away from satisfying your salty & sweet cravings. {vegan, nut free} I saw what you did right there, you scrunched your nose at the thought of popcorn in your chocolate chip cookies, didn't you?   But let me ask, have you ever enjoyed chocolate covered pretzels or salted caramel sauce drizzled on your chocolate cupcake? What about dipping your french fry into a milkshake, have you ever done that?  I had a friend who use to eat olive and peanut butter sandwiches, the ultimate in mixing sweet & salty (ok, this one you can scrunch your nose at).  So now that you've thought about it a little longer, doesn't buttery, salty popcorn inside a sweet chocolate cookie dough, sound like pure genius for your tastebuds?  It's the perfect blend of salty and sweet!

  Who has time to make a big elaborate breakfasts every morning?  I know I don't.  Those are for weekend mornings or when we go out (let someone else make the mess!), right? But sometimes, I want to feel like I'm eating a fancy breakfast without putting in all the work and you know, it is possible! That's how these Banana Berry Sammies came to be. I originally called them Lazy Girl Waffles because I was too lazy to make waffles, but Banana Berry Sammies sounds a little more delightful, doesn't it? 

Avocado Pudding

Have you jumped on the bandwagon yet? For chocolate, avocado mousse that is.

Before you start cringing up your nose or before you chime in with "my kid (or husband) will NOT eat that", let me tell you why you will want to try this.

First of all, there is no added sugar.

Secondly, it is amazingly creamy, rich & decadent without all the calories.

Third, this dessert has nutrients (bonus points for this).

Fourth, it's easy to make.

Finally, although most important, Chocolate!

So when you have a chocolate craving that you want to fix fast, but you don't want to ruin your diet in the process or fill your kids with garbage treats, then this is a MUST MAKE.

If you could go out to eat anywhere, what type of restaurant would it be?  Does the thought of eating pasta make you smile? What about sitting at a table of endless chips & salsa?  Or would it be a special night out with a loved one sitting across from you, while dining on local, farm to table dishes? While I may enjoy each of those immensely, if I could go anywhere to eat, it would be an Indian restaurant.  And here are my reasons why ....

  • There are a TON of vegan and/or vegetarian options
  • The dishes are full of variety & aromatic flavors
  • They do "spicy" right!
  • chai tea, naan bread & masala (I could have just started with that one)
  • I haven't been able to make Chana Masala like they do.....UNTIL NOW
