Who has time to make a big elaborate breakfasts every morning?  I know I don’t.  Those are for weekend mornings or when we go out (let someone else make the mess!), right?


But sometimes, I want to feel like I’m eating a fancy breakfast without putting in all the work and you know, it is possible! That’s how these Banana Berry Sammies came to be.

I originally called them Lazy Girl Waffles because I was too lazy to make waffles, but Banana Berry Sammies sounds a little more delightful, doesn’t it? 

Sammie ingredientsAll you need is bread (gluten free or your choice), SunButter (because its amazing when warm and melted), sliced banana & strawberries.  Throw some dairy-free chocolate chips inside for an extra WOW factor!

Oh, you also need a waffle iron, otherwise, it would just be a sandwich (and we’re not that lazy). Simply spray the inside of your heated waffle iron, lay your sandwich inside and press.  The magic happens quickly! The bread is lightly toasted and the interior just melts with creamy, naturally sweet goodness.

So, if you’re looking for an easy, yet decadent food or breakfast recipe, you should make this!  Dress it up with chocolate chips, change out the type of berries you use, or maybe throw in a little homemade marshmallow fluff if you have some handy.  Either way, it’ll make your mouth happy!

Ingredients

Instructions
  1. Spread each slice of bread with about 2 tablespoons SunButter.
  2. Evenly add bananas to two of the slices in an even, flat layer, repeat with strawberries. (Add chocolate chips or marshmallow full is desired).
  3. Top with remaining bread slices (with the SunButter side down, touching the bananas); set the 2 sandwiches aside.
  4. Heat waffle iron and when it has reached its temperature, lightly spray with non-stick spray.
  5. Lay sandwich in center of iron and gently press down. Cook for about 1-2 minutes or until lightly golden browned on both sides. (mine went through 2 waffle cycles).
  6. Slice and serve immediately. Banana Berry Sammies are best warm and fresh.

I think what I love best about this recipe is that it gives my son, Xander, another way to eat a sandwich.  Sometimes, when you are so limited in what you can eat, it’s nice just to change it up a bit!

    Love this! I made my kids the exact same sandwiches when they were little. They loved it when I packed them in their lunch box. Berries are so much better than jam because they don’t have as much sugar. 🙂

      I agree, I love the slices of berries instead of jam on this sandwich. I’ll take naturally sweet over sugar any day

    Aren’t waffle irons great? I use mine for all sorts of things including toasted sandwiches.
