I’m always on the lookout for healthy snacks for my family.   While a store-bought protein bar may be a convenient choice, it is not always the best option out there!  Many are loaded with all types of sugars, artificial ingredients and allergens that can cause more harm than good. Grocery shopping for a family with special dietary restrictions has gotten easier over the years.  I have found that it is safest to stay on the outside of the aisles and stick with mostly fruits and veggies.  Once I make my way toward the center of the store it is filled with all kinds of processed foods and very little of them are safe for our little guy. Occasionally you find a specialty item that seems like a life saver but for the most part, it's a tricky time walking through those areas, especially when it comes to Protein Bars.

Salt and vinegar dress up these sweet potato bites for a mouth watering, tangy & delicious take on a classic potato chip. My salt & vinegar love affair started back when I was a child in Canada.  I used to love the Hostess brand with little devils on the front of the bag.  Those seemed to pack the most punch and made my mouth pucker more than any other.  I'm pretty sure there was a time or two that I ate so many chips that I could no longer feel my tongue!  Despite both the pain and delight I put my mouth through, my love affair continued.

Whether you are throwing a party or attending one to celebrate the New Year, it's always good to start off the year with a few delicious appetizers, like these incredibly easy Hasselback Baby Potatoes.

During this years' Christmas party, I made a batch Hasselback Potatoes for the first time using baby sized spuds. I barely had time after they came out of the oven to sneak a pic or 2 because they were gobbled up, right away.  Needless to say, I just had to make them again then again until finally, no one was around to eat them (except me and I may or may not have eaten 1 right out of the pan).

I tell you this because these little munchies made everyone happy!  Hubby, kiddos, guests...really everyone.  Because I only share the "hits" not "misses",  I was determined to get this recipe with you before New Years Eve.  Then I realized...tomorrow is NYE!!! WOW.  SO in order to get this out in a timely manner, this is going to be short and sweet.  Sorry.... no long stories, no wordy explanations, just pictures and this Hasselback Baby Potato recipe.   You have parties to get to anyways, right?

Berry Popsicles

Every time I walk through the frozen section of the grocery store, I catch a glimpse of the Popsicles and quickly re-live a moment in my childhood.  I use to love, love, love Popsicles.  It could be simplest of them all, you know the ones, liquid filled in a clear plastic tube only to be frozen until ready to have the top cut off.  Then there were those fun superhero ones, with multiple colors, flavors and shapes that looked like rockets most of the time.  Oh, and then there was those push-pops! My mom didn’t buy those often but when she did, oh my goodness!  

It must be a kid thing, because my kids love Popsicles too.  We couldn’t really eat ice cream due to my son’s dairy (among other) allergies, so frozen fruit treats were the way to go.  Occasionally, I’d let them indulge in some sugary ones, but most of the time, the ones made from real fruit juice filled my freezer. Have you seen how expensive those are though? I can understand why,  100% organic berries and natural sweeteners would be more pricey than fruit flavored sugar-water.

So, I started making my own, and I'm going to show how to make your own Popsicles, using only 4 ingredients. Of course you can always buy them, pre made,  but making them at home will save you money, let you create your own flavor combinations and provide your family with a treat that is actually good for them.

Thai Green Curry with Cauliflower

As I was making my menu for the week, I realized just how crazy busy my week actually was.  There is not even 1 night free, which isn’t unusual anymore.  Instead of freaking out, I remembered that I prayed for all of this.  The healthy kids, a wonderful husband, a job, a church we love, friends, etc.  Each of those bring much happiness, and much busyness.  There are athletic practices, music practices, church group, fundraiser dinners, church and even a Bieber concert thrown in there this week.

Instead of feeling defeated before the week has really begun, I go back to my menu and start trying to figure it out. I need to make dinners that are delicious, healthy, plant-based & easy.  Keyword here, EASY!   

I know I’m not the only one with busy nights, in fact, many of my friends and those I coach are constantly telling me how they eat out most nights and just can’t find the time to make a good “home-cooked” meal.  But trust me, but with a little planning, you can make a good-for-you meal just as quickly as it’d take you to drive somewhere and grabbing something to go.  And just in case you need a little extra help, here's my downloadable Weekly Menu Planner to make dinners a little easier for you. 

As for a recipe, well I have that too!  Whether you have had Thai food or not,  this Thai Green Curry with Cauliflower will take you on a little culinary adventure and is a perfect start to your meal planning. This is a wonderfully, rich & creamy dish, with just enough heat to make you smile.  Best of all, it's so, so easy to make and takes less than 30 minutes!   

Sweet mango & mashed avocado is heavenly, especially with the added crunch of jicama in these delightful spring rolls.

Spring Rolls

I absolutely love looking out to my back yard through our bay window.  Although the trees are bare and the grass is brown, the site of beautiful red cardinals grazing off the bird feeder, all but makeup for the lack of color due to winter months. And although it is still a little chilly some days, the sunlight warms the room and reminds me that Spring isn't too far off.

This sunlight, not only makes this the perfect sitting area for gazing, but it also makes this the perfect place for ripening those stone fruits not quite recipe ready.  The mango and avocado I recently purchased from the market have patiently been sitting on the table, just waiting for the sun to ripen & sweeten them up for the perfect recipe. Meanwhile, as the sun was doing its thing, there was this wonderfully, crunchy jicama just waiting to join the party as I had something wonderful in store for them.
