Garfield is not the only one who LOVES lasagna!

My oldest son Zac is becoming a bit of a foodie. Maybe its because he's been listening to me for all these years talk about food, or having them help me in the kitchen. Maybe it's because he's taking a Food Prep class in high school this year and is enjoying being creative in there.  Maybe it's just because he likes good food.  :) Whatever, the reason, it makes me proud to see him enjoying the tastes & flavors of REAL, home-cooked food.  Usually, he's the first to request certain dinners as well, especially when we've been in the season of eating out a little more than we should. (I know you've all been there!).

Sometimes, it's a request for chili, sometimes enchiladas, but most of the time, it's lasagna. Vegan Lasagna to be exact. This recipe by far is his favorite and was so loved by others, it was included on Buzzfeed, much to my kiddos delight.  However, sometimes I just get bored with making it the same way and decided to turn this recipe into Easy-to-serve, Roll-ups.

These cute little rolls, didn't take any longer than it would layering a big pan of traditional lasagna and I loved that each bite, was full of flavor and noodles. Kind of like when you eat from the center of the lasagna pan.

There have only been a few times that a new food concept had me intrigued (like when meringue was being made from aquafaba - the liquid from canned chickpeas) and this is one of those times.  Let me explain.

Chocolate Sunbutter Crisp Pops

This winter, we took the kids to see the movie Creed and it's been non-stop, all things Rocky since then. We have all watched & re-watched, every single movie over the past 2 months and even now, I’m sitting here with my daughter, watching as Rocky admits to Adrian that he is afraid to fight & lose everything shortly after Mickey's death. As always, Adrian ends up encouraging him, telling him that she believes in him which leads to a more intensely driven training sequence. Enter “eye of the tiger”……..

This is seriously such a great movie series (Rocky V included)!  

Do you know what else is seriously good?  Nestle Crunch candy bars, or at least they use to one of my favorites when I was younger.  Something about the sweet chocolate with crispy rice in each bite, had me running to the corner store to spend what little money I had as a kid.

Sweet mango & mashed avocado is heavenly, especially with the added crunch of jicama in these delightful spring rolls. Spring Rolls I absolutely love looking out to my back yard through our bay window.  Although the trees are bare and the grass is brown, the site of beautiful red cardinals grazing off the bird feeder, all but makeup for the lack of color due to winter months. And although it is still a little chilly some days, the sunlight warms the room and reminds me that Spring isn't too far off. This sunlight, not only makes this the perfect sitting area for gazing, but it also makes this the perfect place for ripening those stone fruits not quite recipe ready.  The mango and avocado I recently purchased from the market have patiently been sitting on the table, just waiting for the sun to ripen & sweeten them up for the perfect recipe. Meanwhile, as the sun was doing its thing, there was this wonderfully, crunchy jicama just waiting to join the party as I had something wonderful in store for them. Vegan Chana Masala is a dish you can easily master. Rich in deep, aromatic flavors & a little spice to entice your taste buds. Vegan & Gluten Free (also nut free)

If you could go out to eat anywhere, what type of restaurant would it be?  Does the thought of eating pasta make you smile? What about sitting at a table of endless chips & salsa?  Or would it be a special night out with a loved one sitting across from you, while dining on local, farm to table dishes? While I may enjoy each of those immensely, if I could go anywhere to eat, it would be an Indian restaurant.  And here are my reasons why ....
  • There are a TON of vegan and/or vegetarian options
  • The dishes are full of variety & aromatic flavors
  • They do "spicy" right!
  • chai tea, naan bread & masala (I could have just started with that one)
  • I haven't been able to make Chana Masala like they do.....UNTIL NOW
