Eating dirt won't hurt you! Really!

Thanks to my friends at Enjoy Life Foods & So Delicious, you too can make your own allergy-friendly Dirt Cups. Trust me, this is quite a treat for the kiddos and if you don't have kids, that's ok too.  Nothing like making a dessert to make you feel young again.

Toffee Square Cover

Salty, buttery, chocolatey…….need I say more?

I guess it wouldn’t be a fun read if I just ended there, but here’s the thing, these treats just don’t need a whole lot of talking about.  Their deliciousness really speaks for itself.

All my kids need to say is "can you make those cracker things" and I know exactly what they are asking for.

One of the things that I love about allergy-free baking is the challenge. I enjoy taking a recipe that is known and loved and turn it into a treat that my son, and others that share his allergies can have. I also love being able to hear my friends rave over something and then hear their shock when I tell them it's vegan. Like Vegan Oreo Truffles. Did you notice in the title it says "Oreos"?  Did you know they are vegan, which means they are free of dairy and eggs as well as any other animal products. Now don't mistake vegan for healthy, however, it won’t kill my kid, and so in that terms, it’s healthy enough.  (I used regular Oreos, but read the labels, because some DO contain milk and may be in a facility that also produces peanut products). Oreo Truffles go back a long time; I couldn't even tell you where it originated from or who gets credit for the original recipe. You may have seen them served on a platter at a party or may have even tasted one (or 3) before. Basically, its crushed Oreos, mixed with cream cheese then coated in chocolate or candy coating. Tastes amazing, but absolutely NOT what you want to hand anyone with food allergies or certain restrictions. Here’s where I come in, making this something you now CAN eat.

Veggie Carrot

Let me be Frank with you....these Hot Veggie Dogs are good! ( do you see what I did there? My oldest son, who enjoys a good PUN would be so proud).

Seriously, these are stinking amazing!

There have only been a few times that a new food concept had me intrigued (like when meringue was being made from aquafaba - the liquid from canned chickpeas) and this is one of those times.  Let me explain.

Chocolate Sunbutter Crisp Pops

This winter, we took the kids to see the movie Creed and it's been non-stop, all things Rocky since then. We have all watched & re-watched, every single movie over the past 2 months and even now, I’m sitting here with my daughter, watching as Rocky admits to Adrian that he is afraid to fight & lose everything shortly after Mickey's death. As always, Adrian ends up encouraging him, telling him that she believes in him which leads to a more intensely driven training sequence. Enter “eye of the tiger”……..

This is seriously such a great movie series (Rocky V included)!

Do you know what else is seriously good?  Nestle Crunch candy bars, or at least they use to one of my favorites when I was younger.  Something about the sweet chocolate with crispy rice in each bite, had me running to the corner store to spend what little money I had as a kid.

Sweet mango & mashed avocado is heavenly, especially with the added crunch of jicama in these delightful spring rolls. Spring Rolls I absolutely love looking out to my back yard through our bay window.  Although the trees are bare and the grass is brown, the site of beautiful red cardinals grazing off the bird feeder, all but makeup for the lack of color due to winter months. And although it is still a little chilly some days, the sunlight warms the room and reminds me that Spring isn't too far off. This sunlight, not only makes this the perfect sitting area for gazing, but it also makes this the perfect place for ripening those stone fruits not quite recipe ready.  The mango and avocado I recently purchased from the market have patiently been sitting on the table, just waiting for the sun to ripen & sweeten them up for the perfect recipe. Meanwhile, as the sun was doing its thing, there was this wonderfully, crunchy jicama just waiting to join the party as I had something wonderful in store for them. Mango Avocado Spring Rolls with a Spicy Lime Dipping Sauce.
