During this years' Christmas party, I made a batch Hasselback Potatoes for the first time using baby sized spuds. I barely had time after they came out of the oven to sneak a pic or 2 because they were gobbled up, right away.  Needless to say, I just had to make them again then again until finally, no one was around to eat them (except me and I may or may not have eaten 1 right out of the pan).

I tell you this because these little munchies made everyone happy!  Hubby, kiddos, guests...really everyone.  Because I only share the "hits" not "misses",  I was determined to get this recipe with you before New Years Eve.  Then I realized...tomorrow is NYE!!! WOW.  SO in order to get this out in a timely manner, this is going to be short and sweet.  Sorry.... no long stories, no wordy explanations, just pictures and this Hasselback Baby Potato recipe.   You have parties to get to anyways, right?

This one is for you Heather!  Here's the Vanilla Pumpkin Swirl Cheesecake you asked for :) Delight & surprise your friends with this allergy-friendly (& vegan) pumpkin cheesecake My friend Heather is NOT pumpkin lover by any means but she was willing and tried a piece of my Vanilla Pumpkin Swirl Cheesecake (isn't that a real friend?).  Anyways, as it turned out, she ate the whole thing and in fact, made me swear I put this on my blog, pronto!   Then, my husband, who does love pumpkin but is lovingly critical of all things vegan, let me know that this was one of the best desserts I've made. So, if my pumpkin-hating friend and my non-vegan husband rave about this dessert, then I just HAVE to include it, right? Here's to Vanilla Pumpkin Swirl Cheesecake!

Red Chile Jackfruit Tamales

I have to admit that I've always been a little leery of making tamales, I mean, leave it the experts right?  I'm fully confident of making desserts, pastries, and other main dishes but never once have I even attempted to make one of my favorite foods, the tamale. That is, until I was given the chance to check out a copy of Vegan Tamales Unwrapped: A Step by Step Guide to Savory and Sweet Tamales from Dora Stone of Dora’s Table. Then, as fate would have it, I also happened to catch an episode of Diners, Drive-ins & Dives which featured a lady making tamales!  It didn't look too hard.  SO with my new found confidence and ebook in hand, I committed to making Dora's Red Chile Jackfruit Tamales.

Chocolate chip cookies for Santa, hot chocolate by the fireplace, milk chocolate candies in pretty boxes, and then there is chocolate cake.  But not just any cake, rich & decadent German Chocolate Cake with that sweet & sticky coconut glaze to be exact.  Doesn't the sound of that bring a smile to your face?  And you haven't even had a bite yet.  Well, we're going to fix that! 

  Tis the season for gift giving! It actually started out as a non-peanut butter fudge that just didn't turn out solid enough.  But what it did have, was this wonderfully sweet and decadent flavor that I just couldn't resist.  Then that little light bulb in my head went off and all I could think of was remaking it as a pie filling!  And "wha-la" an allergy-friendly, top 8 free, gluten-free & vegan dessert. Are you ready to get baking?

Even though I make mashed potatoes throughout the year, Thanksgiving just wouldn’t be the same without it. However, most recipes are loaded with butter & creams, which make it taste amazing but not healthy or allergy-friendly. So what if i told you that I had a healthier version.... a deliciously creamy, healthier version? Last year, I experimented a bit by making mashed cauliflower instead of potatoes and although it does taste perfectly fine, it just wasn’t the same.  Like when you know you're eating something healthy, but you’re still secretly wishing it was the real thing.  So I decided to mix the cauliflower in with the potatoes and you know what, it's the best darn Cauliflower Mashed Potatoes you’ll ever have.

Do you know how to make a red velvet cookie even better?  Dip it in chocolate! 

Facing food allergies can be a challenge but it shouldn't mean you have to go without. So in 2011, a few years after Xander's diagnosis, I was inspired to write an ebook called Sweet Cheats. It is filled with tasty desserts and sweet treats that are all dairy, egg and nut free! You can check it out in the link but keep in mind, the pictures aren't great (well before I really knew how to do food photography) but the recipes are delicious!

Sometimes I forget about that book and the recipes in there but then it dawned on me, I've only included one of those in this blog!  Crazy right? Especially since those are some of our most loved desserts.  Like these Chocolate Dipped Red Velvet Cookies, those are #1 on Xander's MUST EAT LIST.
