Delicious #glutenfree #wideloaf bread, new from Canyon Bakerhouse What is better than a deliciously stacked, homemade sandwich? How about being able to make it on a Heritage style, Gluten-free Wide Loaf?! That's right, I said gluten-free :). I'm always a little skeptical before tasting packaged GF bread, probably because I have tried so many horrible tasting ones. Some taste like cardboard, others taste like nothing and most of them are simply as hard as a rock.   Because of this, and the fact that I don't actually have to eat gluten-free, I typically opt for sprouted wheat bread or simply none at all. However, I'm always looking to find an option that is free from wheat or gluten, especially for my son's benefit.  Because of that, I was thrilled when I heard about Canyon Bakehouse's new Heritage style, Gluten-free Wide Loaf which is making its debut in stores nationwide very, very soon!

  Who has time to make a big elaborate breakfasts every morning?  I know I don't.  Those are for weekend mornings or when we go out (let someone else make the mess!), right? But sometimes, I want to feel like I'm eating a fancy breakfast without putting in all the work and you know, it is possible! That's how these Banana Berry Sammies came to be. I originally called them Lazy Girl Waffles because I was too lazy to make waffles, but Banana Berry Sammies sounds a little more delightful, doesn't it?

Seriously, these are stinking amazing!

There have only been a few times that a new food concept had me intrigued (like when meringue was being made from aquafaba - the liquid from canned chickpeas) and this is one of those times.  Let me explain.

Sweet mango & mashed avocado is heavenly, especially with the added crunch of jicama in these delightful spring rolls. Spring Rolls I absolutely love looking out to my back yard through our bay window.  Although the trees are bare and the grass is brown, the site of beautiful red cardinals grazing off the bird feeder, all but makeup for the lack of color due to winter months. And although it is still a little chilly some days, the sunlight warms the room and reminds me that Spring isn't too far off. This sunlight, not only makes this the perfect sitting area for gazing, but it also makes this the perfect place for ripening those stone fruits not quite recipe ready.  The mango and avocado I recently purchased from the market have patiently been sitting on the table, just waiting for the sun to ripen & sweeten them up for the perfect recipe. Meanwhile, as the sun was doing its thing, there was this wonderfully, crunchy jicama just waiting to join the party as I had something wonderful in store for them.
