Chocolate chip cookies for Santa, hot chocolate by the fireplace, milk chocolate candies in pretty boxes, and then there is chocolate cake.  But not just any cake, rich & decadent German Chocolate Cake with that sweet & sticky coconut glaze to be exact.  Doesn't the sound of that bring a smile to your face?  And you haven't even had a bite yet.  Well, we're going to fix that! 

Looking for a quick treat to make your guests this holiday season?  Look no further because I have an incredibly easy, deliciously creamy, SunButter pumpkin pie  that you'll want to be making. 

  It actually started out as a non-peanut butter fudge that just didn't turn out solid enough.  But what it did have, was this wonderfully sweet and decadent flavor that I just couldn't resist.  Then that little light bulb in my head went off and all I could think of was remaking it as a pie filling!  And "wha-la" an allergy-friendly, top 8 free, gluten-free & vegan dessert.  Are you ready to get baking?

Facing food allergies can be a challenge but it shouldn't mean you have to go without. So in 2011, a few years after Xander's diagnosis, I was inspired to write an ebook called Sweet Cheats. It is filled with tasty desserts and sweet treats that are all dairy, egg and nut free! You can check it out in the link but keep in mind, the pictures aren't great (well before I really knew how to do food photography) but the recipes are delicious!

Sometimes I forget about that book and the recipes in there but then it dawned on me, I've only included one of those in this blog!  Crazy right? Especially since those are some of our most loved desserts.  Like these Chocolate Dipped Red Velvet Cookies, those are #1 on Xander's MUST EAT LIST.

Vanilla Cupcakes

I am incredibly picky when it comes to vanilla cupcakes.  They can't be too yellow, or too dry or too dense (cuz that would make it a muffin, right?). Vanilla cupcakes are the most basic cupcake to get right, and yet so many people get it so wrong!  It's like the basis for every other cake, is it not? Switch out a few ingredients here and there, and you can have any variation of flavor you like, including chocolate. It's the first recipe I worked on after Xander's allergy diagnosis, 9 years ago. In fact, he was 10 months old at the time and all I could think about what type of cake could he have for his upcoming birthday.  I had 2 months to figure it out.  Thankfully, he mostly used the cake the mash his hands in to, so whether it was good or not, really didn't matter.  However, last weekend my baby Xander just turned 10 and this time, I needed a vanilla cake that would make his party extra special.  That's when I came up with these Light & Fluffy Vanilla Cupcakes.

How do you make an adult snow-cone? With coffee of course!

  Coffee,,, it's a pretty wonderful drink.  I can drink it hot or cold, but never lukewarm! Morning or late night or even somewhere in between.  It's by far my drink of choice. When I'm not drinking a cup of it,  I'm using it in my recipes!  Have you tried that before? Instead of using the liquid listed, substitute all or half of it with coffee or espresso.  It turns a morning smoothie into a protein packed perk-me-up!  Or a delicious cake into something spectacular.  It turns sweet icing into something decadent.  Basically, it turns great in to amazing! Do you know what else it makes extra special? ICE!  That's right, ice. Think of it as an adult snow-cone, and I don't mean the liquored up kind of sno-cone.  I mean the caffeine infused kind! A Coffee Granita.

S'mores! Can I have me some more please? I wonder if that's how it got its name? When marshmallows, chocolate & graham crackers are combined, who wouldn't want s'more? I know I do and now that I've added SunButter (my favorite nut-free spread), this Summer treat tastes like a melted allergy-friendly Reese's cup, I really want s'more! How about you? 

Gluten-free Cake with fresh blueberries will confuse your senses but delight your mouth.  As my oldest stated, "This smells like graham crackers, looks like a cookie but it's a cake!"

blueberry cake cover Sometimes, confusing your senses is a good thing!  You smell the spices of cinnamon, nutmeg, and ginger swirling through the house and it reminds you of graham crackers.  Then you see these 5 mini cake pans cooling and at first glance, the size of the pans and the fresh blueberries remind you of a large chocolate chip cookie.  BUT WAIT, it's actually cake!  Can that be right?  Is it actually blueberry banana cake that smells like graham crackers?  Yes, my friends, that is right. 

There is something sweet and pure about vanilla cupcakes.  When done right, there is no need for all the icing and fluff because it should simply taste amazing on its own.  It's only when the cupcakes are dry and/or tasteless that you need to add more and more icing or have a cold cup of milk (non-dairy of course) to go with it.   Now, I am not in any way saying to skip the icing, I mean, that is what makes cupcakes look so pretty, but I am saying that you just want it to taste good on its own, and the icing is simply the bonus!

 

Eating dirt won't hurt you! Really!

Every once in awhile, I want chocolate!  Actually, to be perfectly honest, I could have a bite of chocolate everyday.  I usually buy an expensive vegan bar and break off a tiny square whenever the craving got too strong to resist and then I'd hide the bar. :)  That bar could seriously last 2 weeks, sometimes it could last a month, if I had amazing will power.  IF, I left it out in the open, surely one of my kiddos (Cayden) would have eaten it all in one sitting.

Of course, I'm not encouraging you all to hide your candy, but instead, I'm going to show you how to make your own chocolate treats using only 4 ingredients and the healthy add-ins of your choice.  Once you get this, you won't feel the least bit guilty about eating chocolate or letting your kids have a bite.
