This soup is comfort food at its finest. Rich & velvety, dairy-free potato soup. Crazy Oklahoma weather!  Last week it was "puffy coats, layers & boots" kinda of weather and this week, it's been hitting the 70's!  Is it like that where you live?  Although I love the warmer weather and the way the sun feels on my face, I do like to take advantage of the cold days by making foods that are extra rich & comforting, that warm you from the inside out, like this Creamy Potato Soup

Grocery shopping for a family with special dietary restrictions has gotten easier over the years.  I have found that it is safest to stay on the outside of the aisles and stick with mostly fruits and veggies.  Once I make my way toward the center of the store it is filled with all kinds of processed foods and very little of them are safe for our little guy. Occasionally you find a specialty item that seems like a life saver but for the most part, it's a tricky time walking through those areas, especially when it comes to Protein Bars.

Now that we’ve wrapped up the year and beginning anew, it’s a good time for a fresh start. That means getting back to healthy foods and healthy routines again.

Red Chile Jackfruit Tamales

I have to admit that I've always been a little leery of making tamales, I mean, leave it the experts right?  I'm fully confident of making desserts, pastries, and other main dishes but never once have I even attempted to make one of my favorite foods, the tamale. That is, until I was given the chance to check out a copy of Vegan Tamales Unwrapped: A Step by Step Guide to Savory and Sweet Tamales from Dora Stone of Dora’s Table. Then, as fate would have it, I also happened to catch an episode of Diners, Drive-ins & Dives which featured a lady making tamales!  It didn't look too hard.  SO with my new found confidence and ebook in hand, I committed to making Dora's Red Chile Jackfruit Tamales.

  Tis the season for gift giving!
