As a recovering OCD mom, I've learned how to let go a little and enjoy having my kids help in the kitchen.  Of course there are times when all 3 of them are arguing over who gets to add which ingredient, or who gets to stir. And every single time, there is a little extra flour or other cooking ingredient spread across the counter (or floor), but thats all a part of their learning experience, right ?  I actually do still cringe a little on the inside when I see every single measuring tool or bowl being used, or when the mess seems to have reached the living room, but I have to say that my kids LOVE being in the kitchen and in the end, that is well worth it!

 

Banana Corn Pancake

Rarely is there a morning that I don't have to wake up early and get ready to be somewhere. But today, was one of those rare days and it was AWESOME!

Most days, I'm up by 6, making sure my oldest is awake and getting ready for school. Then by the time he leaves, my other 2 are waking and it starts all over again. On the weekends, its all about waking up early and getting my daughter off to tumbling and then Sunday mornings is filled with getting ready and going to church. But this week,,,,,,well I had today off simply because I went to church last night!

It was a pj wearing, pancake making, don't do your hair at all kinda of day (well, at least it was for the kids).

Say goodbye to boxed granola bars! These delicious, no-bake, Vegan and Allergy-free bars will have your kids begging for more and you won't feel guilty for saying "yes".

These bars were inspired by the 'not-so-healthy", "not-so-allergy-friendly" bars on the market today.  I cannot tell you how many times I've just stood and stared at the rows and rows of bars in the grocery aisle.  Have you ever done that?  It can be overwhelming just looking at all the choices but then take into consideration trying to find ones that are allergy-safe, and that's a whole nother level of stress. There have been a few times when I thought "this is it, I think I found a bar that is healthy", but then read through the ingredients only to see that it contains 1 or more of our allergens. 

Because of this, there aren't very many bars that I can safely recommend, so I decided to make my own homemade granola bar.  This recipe is by far our favorite and since they never last long, so be sure to make an extra batch! I call it our "Go Go Granola Bar" because it's perfect for moms, dads and kids on the go, and they go rather quickly :). It's also perfect for those of us who want a healthy bar, filled with real food, good fats, protein and none of the Top 8 allergens!
